Just got replacement tablet, what's the best way to backup old one & restore to new ?

My replacement tablet just arrived (I haven't turned it on yet, I'm guessing before I do I should apply this, although if there's anything else I should do, other than backing up like I'm asking here feel free to suggest it). Anyway my old tablet is rooted (CWM, stock ROM with root), and so I don't lose all my stuff I'd like to be able to back up everything and restore it to the new one. Mainly, I'm worried about apps - I have a ridiculously low download limit at home and I'd prefer not to have to download several big games like GTA from the Play Store again - I'm just not sure if it makes things overly complicated that I'm using both FolderMount and Link2SD to move apps to the SD card to free up space on the internal memory. So, umm... yeah, how I should I do this? (Free options are best, but if it would make things like a zillion times easier if I bought the paid version of an app to handle it, that might be alright).
